- Open kahoot.it in your browser or launch the Kahoot! mobile app.

- If prompted, enter a player identifier (set by the host).
- Choose a nickname:

Yes you can definitely have different players join/complete the same Kahoot at different times.
You just have to assign you kahoot instead of hosting it live. (Notice if you host a live kahoot, the ones joining the assigned kahoot will not be joining the kahoot you hosted live!).
